Sugar Donuts

- 2 and 1/4 cups all-purpose flour
- 1/2 cup granulated sugar

1. In a large mixing bowl, combine the warm milk and active dry yeast. Let it sit for about 5 minutes until the yeast becomes foamy.

2. Add the melted butter, sugar, eggs, vanilla extract, and salt to the yeast mixture. Stir well to combine all the wet ingredients.

3. Gradually add the flour to the wet ingredients, stirring until you form a sticky dough.

4. Transfer the dough to a floured surface and knead it for about 5-7 minutes until it becomes smooth and elastic.

5. Place the dough in a lightly oiled bowl, cover it with a clean cloth, and let it rise in a warm, draft-free place for about 1 to 1.5 hours until it has doubled in size.

6. Once the dough has risen, punch it down to release the air. Roll out the dough on a floured surface until it's about 1/2 inch thick.

7. Use a doughnut cutter or two differently sized round cookie cutters to cut out doughnut shapes. If you don't have cutters, you can use a glass for the outer shape and a smaller bottle cap for the hole.

8. Place the cut doughnuts and doughnut holes on a parchment-lined baking sheet, cover them with a clean cloth, and let them rise for an additional 30 minutes.

9. While the doughnuts are rising, heat about 2 inches of vegetable oil in a heavy-bottomed pot or deep fryer to 350°F (175°C).

10. Carefully drop the doughnuts, a few at a time, into the hot oil, and fry them for 1-2 minutes per side or until they are golden brown. Be sure not to overcrowd the pot.

11. Remove the doughnuts from the oil using a slotted spoon and place them on a paper towel-lined plate to drain any excess oil.

12. If desired, you can dust the warm doughnuts with powdered sugar or cinnamon sugar while they are still slightly oily.
