Albondigas — meaning “meatballs” in Spanish — has roots spanning ancient Rome, Arab culinary traditions, and medieval Spain. The word itself derives from the Arabic “al-bunduq,” meaning hazelnut or small round object. Spanish colonizers brought the dish to the Americas, where Mexico adapted it with local ingredients like tomatoes, chiles, and cilantro. Today albondigas soup is a beloved staple of Mexican home cooking, especially comforting on cold days.
