🌿 Ingredients

  • 1½ cups green or brown lentils, rinsed
  • 1 onion, diced
  • 2 carrots, sliced
  • 2 stalks celery, sliced
  • 3 cloves garlic, minced
  • 1 teaspoon ground cumin
  • 1 teaspoon ground coriander
  • ½ teaspoon turmeric
  • ¼ teaspoon red pepper flakes
  • 6 cups vegetable or chicken broth
  • 1 can (14 oz) diced tomatoes
  • 1 bay leaf
  • 2 tablespoons olive oil
  • Juice of 1 lemon
  • Fresh cilantro or parsley for garnish
  • Salt and pepper to taste

    Heat olive oil in a large pot over medium heat. Sauté onion, carrots, and celery for 5 minutes until softened.
