🌻 Ingredients
- 1 butternut squash (about 2 lbs), peeled, seeded, and cubed
- 1 onion, diced
- 2 cloves garlic, minced
- 1 carrot, sliced
- 1 apple, peeled and diced
- 4 cups vegetable or chicken broth
- 1 cup coconut milk or heavy cream
- ½ teaspoon ground cinnamon
- ¼ teaspoon ground nutmeg
- 2 tablespoons olive oil or butter
- Salt and pepper to taste
- Optional toppings: toasted pumpkin seeds, a swirl of cream, fresh sage
👨🍳 Directions

1Heat olive oil or butter in a large pot over medium heat. Sauté onion and garlic for 3–4 minutes until softened.

2Add carrot, apple, and butternut squash. Stir to combine.

3Pour in broth and bring to a boil. Reduce heat and simmer for 20–25 minutes until squash and carrots are very tender.

4Use an immersion blender to blend until completely smooth. Alternatively, blend in batches in a regular blender.

5Stir in coconut milk (or cream), cinnamon, and nutmeg. Simmer for 5 more minutes. Season with salt and pepper.

6Ladle into bowls and top with pumpkin seeds, a swirl of cream, or fresh sage. Serve warm!
